Within the
short space of a few years the city’s population had increased to thousands.
One Christmas celebration in 1855, a party at Brother Lorenzo Snow’s, was
grandiose compared to a celebrations today. Of course, such affairs were
unheard of in outlying areas. In the words of diarist Hosea Stout, “Great pains
and care had been taken to procure and prepare the best the land could product
or afford to have the best dinner and supper ever got up in the Territory which
without doubt was the case.”
The table
included three changes of dishes, with the first course oyster and oxtail soup.
The second course included roast beef, bear, veal, mutton, chicken and turkey,
plus rabbit, boiled and fricasseed chicken, fried steaks and turkey, and stewed
lobsters. Potatoes, turnips, parsnips, slaw, fritters, and cabbage were served
as vegetables.
